I have a 5lb sirloin tip roast that I want to smoke for Superbowl.  I have a MES 30, Jeff's rub and was looking for input on how to smoke this.  I have done ribs before but not a roast.  Any input would be appreciated!

Thanks,

John

ps. I also have an AMPS.

John I would smoke it at 225 until I get a internal of 135-145 depending on how you like it. Then foil and rest for atleast a hour then slice and you have great roast beef.

Thanks for the quick reply, how long would I keep it smoking? The entire time or just a couple of hours?

The entire time. Your not looking at a super long smoke.

Treat sirloin tip like you would the round.

It is lean and doesn't lend itself to low and slow with pulling.

Take it to med rare or med, depending on the preference of your family.

Slice it thin.  It is not the most tender cut on the animal.

Great for sandwiches when sliced thinly.  Not the best choice for slicing thickly like a standing rib roast or what many call the mythical  "prime rib".

Good luck and good smoking.
