Single Cut Ribs and Jeff's Baked Beans

Decided it was time to use the WSM. Cut ribs up and seasoned with Jeff's Sweet Heat Rub. Put together Jeff's Keto Beans. I cut recipe to 1/3 and still have way more than I need!

Set temp to 250 on the GURU and used pecan chucks. Beans on lower rack.

Two hours put ribs in pan with Sugar free Heads Country.

Checked in one hour and they probed tender but I decided to let ride another 30 minutes. Made up some creamed corn. Ribs where tender but a bit on the dry side. I think if I had took them out when I checked them they would of been better. I have gotten use to the smoke profile of the pellet smoker and these where a bit to smokey for me.

Looks great from here Brian . I haven't used my WSM in years . Been thinking about selling it .
Might have to get it out for a cook .

WSM's have a strong smoke profile in my opinion .
I cut recipe to 1/3 and still have way more than I need!
My Mom always used baked beans in her sloppy Joe mix .

That's que done right! I agree with chop, it's time to dust off the WSM and roll some smoke!

Sure Brian. I cut recipe in half. I used corn on the cob for this but it really was not very sweet. We dont get good corn around here. I really miss Michigan Corn. Froze corn works best I think.

20 oz frozen corn kernels, thawed (2 10 oz packages)
1 cup heavy cream
1 tsp salt
2 tbsp sugar
1/4 tsp pepper
2 tbsp butter
1 cup whole milk
2 tbsp all-purpose flour
1/4 cup grated parmesan cheese

In a skillet, combine corn, cream, salt, sugar, pepper and butter and cook on medium heat.

In a small bowl, whisk together the milk and flour, and stir into the corn mixture. Cook on medium heat until the mixture is thickened, and corn is cooked through.

Remove from heat, and stir in the Parmesan cheese until melted. Serve warm. ENJOY!
 
Looks great Brian! Glad you are still enjoying my rub and beans! I love those bens too. I've frozen before and they weren't bad, just a little texture change on the soy bean.
 
Nice looking plate. We have not had cream corn for a long time. Time to make it again. The recipe looks like a good starting point.
