Yesterday was boneless Turkey Thighs.

Ingredients

4 large turkey thighs
2 tbsp. oil
1 tsp. sage
1 tsp. salt
1 tsp. pepper
¼ tsp. rosemary
1 tsp. thyme
1/3 cup Baby Ray's
1/3 cup Bourbon molasses glaze

Directions
1. Debone the turkey thighs. Roll them up and use butcher’s twine to tie them up into neat little packages.

2. Combine the sage, salt, pepper, rosemary, and thyme in a bowl. Brush the turkey thighs with the oil and then season them with the mixture.

3. Smoke the turkey thighs at 230°F for 2-1/2 hours.

4. Combine 1/3 cup Baby Ray's with 1/3 cup Bourbon molasses glaze and apply to the thighs at 1-1/2 hr and 2 hr points.

5. The turkey thighs are done when they’ve reached a IT of 165°F.

Nice! I have a 22 pounder that needs to be cut up and smoked but I dropped the ball on thawing it to eat this weekend :(
