planing on doing some dry cured/cold smoked sausages and I have hard time to find 2.5 - 3 inches diameter casings that would shrink to size as sausage loses size and weight during dry curing proces... sausage looses up to 30% of weight. .. seems hard to find up here in canada.. anyone familiar to chip in with info. .
