Shredded beef sauce?

I'm having people over for the fight tomorrow and I have a pork shoulder and a beef chuckie ready to throw in the smoker around midnight tonight. I've got the pulled pork down, but the only other time I tried shredded beef, I put WAY to much salt on and it almost inedible. I've learned from that (I hope) and I have the chuckie in the fridge coated with minced garlic now with plans to add salt/pepper right before it goes in the smoker.

My question is whether people use any kind of sauce on shredded beef sammies. Or is it typically just eaten "as is". Any suggestions?
 
Bbq beef sandwiches on buns are good.. just some beef juice mixed in some plain old bbq sauce and shreaded beef would be great!. Cheap buns. [emoji]128526[/emoji] Maybe some caramelized onions.. some of those pickled jalapeno peppers in liquid for a topping..

My favorite sauce for shredded pork or beef is ... coleslaw. Especially refreshing during the summer months! B
 
Personally, I like the slaw too. Not big in the north though (Wisconsin), so no one else would be on board.

As for BBQ, I will already have some out for the pork, but this particular one doesn't go well with beef. The pork will have the sauce on in the crock pot, so putting a different kind out for the beef may cause confusion.
 
For the Pulled Beef, you can't go wrong with,
Au jus
Aoli
BBQ sauce
Whole grain mustards
Horseradish sauces
Pickled, caramelized or raw onions
Sauteed Shrooms

For the Pulled Pork,
Various finishing sauces
BBQ sauce
Slaw
Pickled, caramelized or raw onions
Whole grained mustards
 
All coleslaw kidding aside....Many Texas folks don't use much sauce. I prefer my que naked. That being said I will use Jeffs recipe from time to time.Its good. And my favorite out of the bottle sauce is Mateos. It's got a good Central Texas flavor and thin consistency.

I like to braise my chuckies in a foil pan,after they get some good color on them,with a can of French onion soup and a half can of water. I will also add some cooked shrooms and onions if we're only using the meat for sandwiches.

What is the pic of with the white hunk of meat?

I figured that question would come up. That is the chuckie. I used garlic, salt, and white pepper. The white pepper was mainly because i realized i had just run out of black pepper. The picture makes it look more white than it really was.
