So I wanted to smoke a whole beef brisket this weekend but I'm running into the problem of not having any available pink butcher paper. Would wrapping it in aluminum foil at the stall be okay instead of butcher paper, known as the Texas crunch? Should I wait until 2 weeks later when the butcher paper will be available? What's the advantage of butcher paper over aluminum foil? Thanks.

Butcher paper doesn't get the bark as soft as aluminum foil.

I don't use either, I just let it go unwrapped until it's done.

You get real nice bark that way.

Leaving it unwrapped the entire time doesn't dry it out or over smokey flavor? Are you using prime cut only?

I don't wrap my brisket and yea you get nice bark and i never notice it takes longer to get to temp. if you want some butcher paper you can get it from amazon in 2 days. I never use it and i usually cook select or choice brisket and mine comes out delicious. Its moist from the fat rendered into the meat by cooking it long enough.

Happy Smoking,

If you don't wrap its hard to notice the time difference I'm thinking.
