Short ribs, thighs, and rice

Greetings all!
Had some much needed free time today and the wife wanted short ribs and rice and so that’s what I did. First the bad news- even though these probed nicely, they still were a little tough and could have spent more time on the smoker. First time the probe test did me wrong but that’s probably user error. Can’t win em all….

Anyway….after eating the rest of the short ribs and some broth went into the pressure cooker and that did the trick. The meat is shredded and waiting for tacos tomorrow.

While that was going, I threw some thighs on for lunch this week. Half with old bay and half with a traditional bbq rub. These will be good eats for sure.

Looks like a good meal for sure. A long time ago I had a friend with a Korean mom. She made the best short ribs and steamed rice I have ever had! Also, I've never seasoned chicken with old bay but seems plausible. Nice job.
