Short ribs combo cook

I’m doing beef short ribs today. Don’t have time to do an all day cook, so going to smoke at 200 for 4 hours and then throw in the instant pot for an hour. I layered them with Texas rub and Dano’s chipotle rub. Hopefully they will turn out good.
 
Enquiring minds want to know.
Not so good. They needed longer in the instant pot. They were still a bit on the tough side. They had a good smoke and were tasty, but tough.

I had them in foil to preserve the bark. Maybe that’s why they didn’t get tender enough. They just needed longer.
 
I have conventional pressure cookers, and living at 5400' they come in really handy for certain things. I don't have an Instant pot, but if the tenderness is not perfect, can't you just pressure back up and go another 20 minutes or so?

Probably but as I said, I was in a time crunch, so I didn’t try it. But now I know.
