We did a big harvest this weekend and got a bunch of poblanos and jalapenos out of the garden. I'm gonna smoke and dry them but have a ton of rack space left. I have a pork shoulder in the freezer but don't wanna do a 12-14 hour smoke. Don't wanna do a fatty because im the only one who eats em here. I need ideas for something that will only take a few hours.

any suggestions?
 
I did some wings this weekend. They take about 2-4 hours depending on how many you do. Here's a simple recipe:

2 packages of chicken wings (I used Tyson because they were on sale)
Poultry Rub (used Jeff's rub this time, but my own in the past)
1/2 can of your favorite pilsner beer

-Wash the chicken wings well
-Cut the tips off the wings and separate the pieces (you'll find that if you hit the joint just right, you don't have to chop them)

-Put the wings in a zip-lock back with the beer and rub
-Zip up the bag and shake the wings up so everything is coated well
-Let the wings soak for an hour or longer
-Put the wings in a foil pan and put it in smoker for 2-4 hours

To crisp up the wings, put them on a cookie sheet in the broiler for 10 minutes

No sauce needed for these!

Iffin ya want pulled pork but don't have the time try doing country style ribs. They are cut from the butt and only take 4-5 hours to get them to pull apart.
 
Try some chicken breasts or ABT's. Much quicker and still good Q.
