Ok been hanging for 8 days now. They are shelf stable. If i want dry they will hang another 4-7 days. Might cut one today to check and taste.

Dang shame I don't live closer I would bring over some crackers and help taste test maybe even a cold one or two.

Going with shelf stable, going to a get together here in the resort this week.

Vac seal a couple for my trip to TX in Jan to meet up with Cranky again.

Damn, I didn't look at which forum this was posted in and thought someone was looking for stainless steel for a shelf. Boy was I surprised.
