Awhile back I bought a few cases of Groebel corned beef points on clearance at $1.99 / lbs. I decided it was time to do the last 5. Here they are fresh out of the packs.

Into a lot of water overnight to desalinate a bit.

Made a big batch of Meatheads Katz knockoff rub and applied liberally.

Here they are an hour in in the 270 Cabinet. Running at 260-270F with B&B competition char logs and a liberal amount of applewood chunks.

Here are three of them anhour in. I did wrap in a tightly covered pan at 165 and cooked to finish temp of 203F with an hour rest in the cooler.

The rest went into the fridge overnight and then par froze for 30 minutes. Shaved nice and thin. Was overall pleased with the results. Made for a very good Reuben accordion djg to the neighbors.

Nothing fancy , short and to the point. I was very surprised with the yield loss with 16 lbs raw yielding only about 6.5 lbs cooked. Whelp thats a wrap thanks for looking.
 
Looks great Jeff. Makes my mouth water. With over 50% weight loss be sure to empty that grease bucket. Nice work for sure.
