Why is it that most of the sausage you buy at the grocery store is pre cooked/ smoked? Does it have something to do with the USDA? I am opening a meat market soon and can make and sell fresh sausages all day. I just find it odd that most people do this since it takes them an extra step in the process.

I don't completely understand the question, it's the nature of some sausages to be fresh and others cooked.
If you're talking about pre-packaged and cooked commercial sausages like Aidells, it's a matter of shelf life.

It's wise to familiarize yourself with all the appropriate rules and regs before you even consider the venture.
