Sorry if this is a dumb question in advance. I’m seasoning my MES 30 right now and followed the instructions set to 275 for 3 hours etc. I’m about a half hour in and my temp reads 290. Is this okay? I was under the impression it would max out at 275.

The Temps can be all over , and the read out on the unit is most likely off . Do you have a therm to put on the inside to check it ? Keep an eye on it , don't let it get much over 300 . Get it seasoned up do some reading on temp swings .
 
Thanks for the reply! Right after I typed out the message I checked again and the temp had regulated back to 275° and has been holding pretty steady ever since. I think I should be good to go. Ordered a Maverick dual probe but don’t have it yet so my first time is going to be done periodically checking with a meat thermometer and winging the ambient temp. Thanks again.
