Anticipation finally got the best of me and I just HAD to try out the new smoker. For the past week I've done nothing but do my homework on this little rig. Currently it is -12* Celsius, or 10*F... Even colder when you factor in the wind. I figured if the little guy can come up to temp and maintain it when it's this cold it can pretty much do it any time :p
I plugged it in, set up my Maverick temp probe and let it burn away for the first 2 hours. Only thing I noticed at this point is that the temp gauge on the unit is way off. The probe was checked before putting it in and it was spot on, but in the smoker it read 280-288 when I had the MES set to 230. It climbed up past 300* when I had it set to 275* for the 2 hour "burn off". I'm not sure if it's to do with the crazy cold but this doesn't really bother me as I've got the Maverick and can adjust the temp accordingly.
After the 2 hours I tried a trick I read on here to get some smoke going and season it a bit. The first batch of chips I put in was literally 6 small cherry chips. Let that go for about 15 minutes then put in a very small handful. After just a few minutes I had too much smoke going. Everybody complaining about not enough smoke obviously didn't try doing this :p
The next hand full I put about half as much as the first time and had that beautiful thin blue smoke. Of course, it only lasted about 20 minutes, and this is where the AMNPS comes in handy. I however like the fact that I still need to tend to it every once and a while. If I ever do a long smoke in the 12-16 hour range I'd definitely consider picking one up.
The smell of smoking wood is intoxicating... And the sight of the TBS is heaven...
It's official. I'm hooked! Can't wait for my first smoke on this! Think I'm doing some baby backs on Friday :)
