I am basic new to grilling and want to know if it is better to season the meat before you grill it or wait until the meat is almost cooked?

Marinating, brining and preseasoning are the best ways to really get some flavor into a piece of meat, but seasoning on the grill while cooking is perfectly acceptable.  This will give you another layer of flavors, the seasoning on the outside will be the first taste someone gets while eating.  I do this when cooking steaks, we have a local steak seasoning that I love, so I preseason and also sprinkle a bit on mid way through the cook.  Personal preference, so season away!!

Yep that's the way we do it too.

Each person has thier own taste and wqy to do the seasoning, before, during after, it's a personal call and experience that dictates the procedure.

I am originally from Texas and enjoy marinading my Steaks in a Pico de Gallo (a Mexican fresh salas). Gives the meat a nice flavor and you can use whatever heat of Chile you want(that's pepper). It starts your cooking process by tenderizing some from the Citrus and the cilantro and other flavors come through as nothing but flavor. very good with Flank and Skirt for Fajitas. A T-Bone is wonderful...

Have fun and...

I always rub/season/maranade before grilling. A word of caution is that if your rub has sugar in it then it will burn. So try to use rubs that have little or no sugar in them for grilling. Also if you want to add sauce add it after the meat is almost done, for the same reason, the sauce will burn cuz of the sugar in it.

Good luck!
