Hello we manufacture custom bbq pits and smokers and we use Pam and then run the cooker at 250 degrees for 20 minutes as a final procedure to season the cookers before they leave and it works great.
Just don't send the wife to get the Pam one time I stated spraying the Pam and it smelled like cookies right away then I looked at the can and it was a special Pam for baking LOL Rather than try a new style of chocolate chip ribs we cleaned out the chamber and re applied the correct Pam. Good times.
