looks great! i love fried pork of any kind. lol

my go to is "andys" breading. i cut slices of loin and place them in gallon bag. mallet them till half thickness. dredge through seasoned egg then shake in "andys" flavor of your choice. skillet fry a bunch like said for lunches during week.

Thanks! Which one do you use? I'm seeing fish or chicken seasoning. I'm assuming the chicken one?
 
i use them all. wife wont do the cajun but i will. there is red yellow and cajun. and more that i just found out about! lol i mite have to try that fire chicken stuff! https://www.andysseasoning.com/shop/

i bread all kinds of stuff with andys. just easier than mixing up seasoned flour.

So I am a novice on schnitzel … wife is Polish so more in tune with pierogies and halupki. And I am Italian, so chicken parm sorta analogous.
Guessing basically a breaded and fried pork cutlet, right? Any seasonings/spices to include or exclude? I assume I can slice a pork loin to make this. Or slice a boneless shoulder.

Correct. The most popular is either veal or pork. Sliced and pounded to around 1/4"thickness. Shake some salt and pepper on them.
Then dredge in flour. Then egg, then bread crumbs. Fry in grease until brown and crispy.
