Sausage Stuffing And A Book Recomendation

I have an old meat grinder with a crank that attaches to a table. I read in the "sausage" forum that they can be used to stuff sausages but not very well. First of all, is there a place I can get a funnel for sausage stuffing? What problems are there when using the grinder as a stuffer as opposed to a real stuffer?

Second, someone listed a book for sausage makers to read. What was the name of that book? I figured I could just go to amazon and find it but there are way more books on sausage than I figured.

Farmer, there's been a lot of sausage stuffed with grinders. I had problems because I was stuffing small casings. A grinder is slow but does work for the larger casing sizes. My son made hot dogs and tried the Kitchen aid stuffer and it just didn't work, he used my jerky gun to stuff those.

First find out what size your grinder is, measure the diameter of the plate and look in a chart of meat grinder plate sizes.(google it) If you have a standard size grinder, the stuffer parts are easier to find. Stuffing with a grinder usually for me requires extra hands, at least more than the two I have.

One of the standard books on sausage is Rytec Kutas' Great Sausage Recipes, lot of good stuff in that book, it covers all types of sausage and if you decide to do something special there are other books for just certain types of sausage.

But try some of the simpler ones  to learn the basics and then specialize on the harder ones.
