I found a company in town that sells some commercial sausage making supplies.  Most of the stuff is in huge quantities but the lady told me some stuff was smaller.  My question is is ascorbic pure the same as citric acid?  Also they have a product called:

Hydrolyzed Plant Protein (Powder)

Soya Protein Arcon

 

Could these be used in sasuage recipes that call for soy protein?
 
Ascorbic is vitamin C and is not quite the same as citric acid.

The second definitely sounds like soy protein concentrate and is used as a binder.
