Well, it was a good weekend for smoking, as you can see I did several different things, starting with some smoked jalapenos, can't find the finished pics, but they smoked for about 8 hrs, then went into the dehydrator. I ground them today for a chipotle powder, smells great! My first chipotles!! I learned how to from this site, thank you! Next I had a few salmon pieces in the freezer, I decided to smoke, they went into the brine Saturday, then dried this morning, and smoked, the pic doesn't do em justice, they turned out amazing!, I believe its Bears brine I used from this site, very good. Lastly, I made some snackin sticks!. Just what I had on hand, about 4 lbs ground sirloin, 2 italian sausage patties, 3 of the jalapenos (about 1.5 hrs into the smoke, they were still green) and a seasoning packet from my local butcher. I stuffed them Saturday, and smoked them today with the salmon, I was surprised how much heat the smoked jalapenos added to the snack sticks! Another great smoke!!
