Hey all, been a while since we smoked up some ribs... Coarse I could eat ribs bout every other weekend. LOL. Had some pork ribs & beef short ribs that were needing used up from the freezer. Got them seasoned up, used Rufus Teague spicy pork rub on one rack of the pork ribs & Pigs Ass rub on the other. The rubs were a Christmas gift from my kiddos.

On the beef short ribs, we usually just do 50/50 kosher salt to butcher pepper, but was feeling a bit adventurous.... So used my sons rub on 2 & Southern Links jalepeno ranch seasoning from Owen's BBQ on the other two.

Cooked these with apple pellets in the GMG at 275* for bout 4 1/2 hrs. At hour 3, foiled the BSR's for a little over an hour, then back on.

Here's what we ended up with...

Wife made up some CI taters with onions & bacon! She also made a salad.

Them ribs look great. I have trouble getting beef ribs tender. I have alot to play with sooooooo, maybe next weekend.
