Im new here, and very excited to be building my first offset smoker from a 110gal propane tank. I have been using a cheap offset that I modified to great effect, but now its time to step up to the big leagues! I work in sales/estimating for the construction industry, i have a welder, but I grade myself like a 4/10 on weld and fabrication skills, so I will not be producing dime stacks per se but I am not concerned about failures.

I am particularly excited to read through the many recipes compiled here, and of course read some build threads and steal ideas for my very own monstrocity. There was a recent thread where a guy added a griddle on top of his firebox, great idea, I am already looking to incorporate that. I spent some time on the reddit bbq threads, but came away unimpressed, especially compared to how many build threads with photos are compiled here.
