I have some Salt Pork Belly. Is this good in a smoker? If so, what is the best way to smoke it?
 
It would be awfully salty. I use salt pork for frying fish. Render the salt pork in a frying pan, toss in the fish and fry. The scruntions that remain in the pan after the fat is rendered are a salty treat. You could try smoking a small piece but I’d bet you won’t like it, too salty.
