There’s a restaurant in Midland Texas that has the best chile verde and asado. They have a very unique salsa served with chips. It’s amazing. I’ve been working on my imitation recipe that matches theirs. Finally figured it out. Here’s my recipe minus 3 ingredients. 12-14 jalapeños, 6 Roma tomatoes, one onion 4 garlic. Boil in water for 10-15 minutes then take out and blend with salt, pepper and vinegar. Add chile de arbol to really kick the heat up in the boil. Many iterations involved tomatillos but I figured out that was not in their salsa. Give it a try!
