Salsa Verde Taters

    Salsa Verde Taters

    Preheat oven to 450°

    2 bags Southwest Style Hashbrown Taters
    (diced, not shredded)
    1 large Onion, chopped medium
    2 7oz cans of Salsa Verde
    1 28oz can of Green Enchilada sauce
    1 can of Green Chiles, chopped (optional)
    1 large Bell Pepper, chopped small (optional)
    1/2C Cilantro, chopped (optional)
    2T Garlic, minced
    Salt to taste
    A generous amount of queso Fresco or Anejo can be crumbled atop in the last 1/2 hour (optional)

    Dump it all in to a 9x13 casserole dish and mix well
    Bake at 450° till hot and bubbling throughout, approx 1.5 hours

    This was my first time throwing this together, next time I'm adding lots of chopped bell peppers, green chile and maybe some cilantro.
    This will probably be a good casserole too, by adding pork or chicken.

    A person could not go wrong by crumbling a wheel of Queso Fresco atop this.
    Or by adding a cubed or shredded meat,turn it into a full blown casserole.

    Homemade whenever possible, but unfortunately that is seldom.
    Thankfully I like the Herdez brand of canned products, their salsa verde, casera and other items, e.g. Chipotle Chiles in Adobo sauce.
