Fish came out good. But some of you who have the brinkmann smoker know that you can't adjust the temp .. Today I purchased a router speed control with variable speed control hopefully this helps . Has anyone else experimented with this ?

Check the wattage rating for the speed controller..... It may not have the rating needed for the element..... I use a 1500 watt incandescent dimmer switch for my 800 watt element... overkill but it works very well...... Dave
It worked its a 15 amp 1500w the lowest setting gets me to 170 didn't check the high setting yet. I switched to this kind of smoke for one I live in the city of Lincoln Nebraska and two they would probably frown upon the smoke houses I'm used to . Darn alder is hard to come by here in the Midwest lol.
Buck, at those low temps, you might look at The AMNPS and an assortment of pellets... start with Pitmaster's Choice and a mix of others to add to it for specialty flavors.... I just ordered 25#'s PC and 10#'s Hickory... I've got 60#'s of bellies to smoke as soon as the weather cools off here....
