Authentic PDO recipes are hard to come by in English. I am having to do a lot of looking, digging, and searching. I do have a contact in Italy, and that has been helpful. Here is a video on Varzi Salami PDO. The video goes into the production of this salami. It is in Italian, but has auto generated translation..you can select English.
 
From my research, Northern Italain salami are softer than southern Italain salami, this is due to the fat belnding. Varzi uses the fat from the belly, throat, cheek, and thigh for a pillowy, soft buttery finish to the salami....
