RV Carnitas

Carnitas can be made in many ways, even in an RV

Close to how my mom would make it, with a couple deviations.

Cubed pork butt.

Add just enough water to cover. (dont be tempted to use beef or chicken stock)
Salt
pepper
cumin
mexican oregano
annatto
chili powder (i used calif)
 


Bake at 350 covered for 1.5 hours.

After take poke out and pull with 2 forks. Save the cooking broth.
 



Return pulled poke back into the broth and continue cooking (covered for 1.5 hours)


Taste and adjust if needed. I added 1 can of Rotel and 1 small can of Chipotle sauce.


Put pan back in oven (uncovered) and cook until half the liquid is gone.

Uncovered I put the carnitas under the flame to crispy up the pork.


Refried bean and rice.



Warm flour tortilla and done.


My wife likes to make hers in a pile.

 
Damn it Rick... I'm liking the sounds of these.. I don't suppose you measured the ingredients ?

When you say "under the flame" .. do you mean the broiler ?

Uncovered I put the carnitas under the flame to crispy up the pork.

Yeah i guess you could call the RV oven a broiler too. I didnt measure just tossed it in there.

Once again, your recipes/techniques blow me away! If you ever make it out to Colorado, you've got a place to pull your RV up to (my house). I have reasonable rates (sausage/cooking/smoking lessons). That's some fine looking grub...
