I have 5 lbs of round eye between 2 pieces. I was thinking of pulling both - take them to 165 wrap with beef broth then pull at 205
But I was thinking can I make burnt ends with one of them?
 
In my experience eye of round is best med rare to medium. My wife use to toss them in the crockpot they will pull but be dry due to lack of fat and connective tissue that other cuts such as chuck have. Maybe some French onion soup or broth will help but I'll bet you'll want some BBQ or other sauce. Here's a whole eye I did on the rotisserie slightly over cooked for our tastes but still tasty.

 

Just got home from shopping
150 internal temp so letting them a little longer - just added more coal cold and hot
Added another chunk of hickory
Will foil one shortly
 
Those look great. I love rare beef
But wife wants tacos tonight and the burnt ends will be my lunch for the week.
