A lot of y'all are light years ahead of me, so I know better than to act like I'm an egg spurt. But I do read a lot. I've smoked quite a bit of stuff, but never anything that requires two hands to move.

I put my first picnic shoulder in my propane Masterbilt this mornin' at 0600. Gotta' start somewhere, right? We'll see what happens.
 

I'd like to express my thanks to all of you that have contributed to my learning here. My shoulder came out PERFECT!

Cabinet temp of 250 for ten hours and an IT of 150. I used Timothy hay, Apple and Hickory to generate the smoke.
 
I'm guessing you didn't pull it at 150.

I would think at that temp it would be pretty tough.

It sure looks good though.

Every thermometer I own is NSF approved and can be user calibrated. The first thing I do with every new thermometer is a boil test and calibrate accordingly. I also check my thermometers about once a month. I'm off the chart anal about my equipment being accurate, dependable and well cared for.

I admit that my thermometer MIGHT be off a degree or two at the most. Am I sure? I'd bet my truck on it.
