Hi,

I've been nosing around here to study the many mods to the MES 30" I just purchased.  I'm far enough along from my Thanksgiving turkey experience to learn that its designers might have been well served to have first read the many posts here.  Before the MES, I'd smoked a lot of turkeys on a Brinkmann.

It's been fun to read the experiences of you other guys working through the many ideas and suggestions.  Thank you.  I hope I can contribute at some point.

We are all smoke junkies here and we have to get our fix. If you have questions
