I'm using Cougar78's (Kevin) recipe again but this time I'm stuffing these into beef rounds. I'm thinking hot pickled bologna!
Going to let these rest for a day or two before slicing.

They look great Sam, now I got to add that to my long list of sausages to make.
 
Some money shots and hot pickled Bologna. Two different recipes as am experiment. I'll break these open in a week.

Them look outstanding how long will you pickle them before you eat and what is the pickle mix
I'm going to a week for the flavors to really meld.

The one on the left is something I found on google. It's a pretty popular recipe.

1.5 cup white vinegar

.75 cup water

1/4 tsp cayenne

1  Tbs crushed red pepper flakes

1/4 tsp salt

1 tsp sugar

Heat ingredients until hot, let cool. Pour mixture over Bologna. Refrigerate.

The one on the right is a NEPAS recipe, much more aggresive with vinegar and heat. I ain't posting nothing of his without his permission.
