Well after two years of moving around and switching jobs I fired the big smoker my dad and I made a few years back. I tried a propane assist smoker. But wanted to get back to burning logs. Had to clean it a bit Bc it was outside for two years. But nothing a couple weekends or rust busting w elbow grease and some cooking oil couldn't fix. Currently getting ready to throw the ribs on. Getting fire started was fun during ia severe storm warning where the winds and lightning were exciting to watch and cut wood in.
Here are the starter pics. Had to set ribs back in the fridge as the storm delayed the fire getting right as usual. More to follow. Temps are getting right to clean the grill off w the cut onion technique and get these spicy rub ribs on the grill. So here ya go.


 
Well caught a break in the storm. Put these on and been steady Temps at 225-230. Gonna try cookin the ribs by IT temp rather than time since they are various thickness and 2 came from store and one from local farm. I will put wings on here in an hour.
 
Wings have been sitting in a spicy rub and wet mustard base coating for 3 hrs prior to putting on smoker. Temps have went from 250-270 after I wrapped ribs. Gonna try to beat the storm that's coming in a couple hrs. I can finish it all in oven if need be but wanted to get some hrs of smoke on it.

Exactly. It's Simple just a little more demanding till u figure out the smoker. Yet it's my favorite

Thanks. Had to do a test on a wing that was in a hot spot. Very tender. spicy flavor and great smoked crispy skin.
