Ya , know, there are so many ways to do your Smoking . I suggest starting a "Log Book" of your Smoke and include everything you can about each and every Smoke .
This gives you a good base to learn the craft... Practice makes perfect in anything you do , and this is no different.
Do things Your way and improve on it each time . You'll be amazed how soon you will improve your game...
Just for example , I never foil my Ribs , cook @ 225*F , watching my fire all along keeping a steady temp., no therms. on my Ribs , and I do not open the Lid until I feel they are done (you too can learn this , but it takes practice , as mentioned.)
Here's how a "Naked " Rib ( Rub only) looks like from my Smoker:
I like a "bite off the bone Rib " and I have no teeth and can eat these easily... but if you like the Fall off the Bone Ribs , then by all means , do them your way...
