Ribs with my new smoker

Smoked some baby back ribs for the big game! Used a little local bbq place rub with mustard put on at 225. Tried to do 2-2-1 method but I took off before last hour. The were falling apart. Think my smoker gets a little hotter than the read out but all in all, they tasted awesome!! Can't wait to try something else!

Jamie, morning and welcome to the forum.....  Therms supplied with factory smokers are off usually off temp...  Get a remote therm and monitor the temp at the grate level the meat is on....  Once you figure out the difference from OEM to a calibrated therm, you are in business.....  

Please take a moment and fill in your location in your profile....  Near  Kansas City is OK.... It will help in the future in answering certain questions that may arise... 

Glad the ribs were OK....  when you get the temp figured out, they will be perfect, I'm sure....   Dave
