I'm pretty new at smoking and I certainly appreciate all the sage knowledge that is found here at SMF, it's been a great inspiration. We have a new wholesale club called BJ's that opened up near us, I found some Swift brand all natural St. Louis ribs that looked great in the package so here we go.
2 different rubs
The racks were huge so I had to cut them to fit in the MES 30. I used apple and hickory pellets in the AMNPS, about a 50/50 mixture
3 hours in and time for a wrap with some apple juice
Unwrapped and sauced for the last hour, the Misses and I both like Sweet Baby Rays sauce
They came out really moist and not quite fall of the bone
Some tater salad and corn, we were both stuffed. I would try the Baby Back Ribs they also had that were totally natural next time.
