Made my thrid batch of baby backs today for dinner.  My last two batches have been good.  Both were very tender (fall off the bone) and super moist with great flavor.  Today I tried a couple different things.  On part of it I spread mustard to help the rub stick and part of the ribs had the sauce I have used previously, and the other part had a sauce that I made myself.  I like the part that had my own sauce with mustard, but the mustard with the previously used sauce was not ass good.  I also altered my cooking process to see if I could keep the meat tender and moist, but yet leave a bite mark and not pull all the meat off the bone.  The ribs turned out pretty good, with a little more pull then I would have liked.  It did not matter too much as we ate more than what we should have.  Enjoy the pics!

Nice smoker and nice ribs.. I haven't done ribs in a long time... I am jonesin for them now.... Funny thing is, as much as I love ribs, I would sooner do a boston butt for pulled pork than ribs because its a quarter of the cost and 4 times the amount of product!  They are great when done the 3-2-1 method though. MMMMMMMMMM...

Thanks guys.  This is just the beginning of my bbq/smoking career (July 2012).  I have a lot more meats to try and recipes and techniques to use! 
 
Those ribs look good to me! I'm planning on doing my first round of ribs this weekend, hope that they turn out as nice as your did.
