I tried another experiment today. Since the "Outhouse" is rather large for hot smoking, I tried some ribs in the fire box again. This time I put some charcole into a cast iron frying pan and got it lit. When the flame was gone, I added the hickory chips. I experienced a problem that I should have thought about, flare up. Not having a water pan for the drippings. So I decided to place a cookie sheet directly on top of the coals and wood chips and added some water. That didn't last too long, and I had to constantly check it and add more water, but it was well worth all the extra babysitting. Here are a few pics.

After this, now I am thinking maybe I should build a hot smoker rather than buying one, but still undecided.
