i have found that balogna it is hard to smoke very deep. it there a trick to smoke penetration on such dense meat? injection anyone? have thought about it but never tried. maybe some smoky BBQ sauce inside would help?

when i BBQ a chub i poke holes in it all over. gash it in diagonal pattern. slobber sauce on it and keep turning every half hour. after about 4 hours i wrap it in foil and let it in the smoker till coals run out and its cool to the touch. pop in fridge till next day.

I have cut it around and rolled it out pretty flat and then put cream cheese, cheddar cheese, and other goodies in it then rolled it back up. Stand it up on some foil and hold it together with a couple wooden scewers while smoking. Turns out awesome. Just have to be very patient cutting it to be able to roll it out. Not easy but very rewarding!

I cut mine down the length of the chub into two half moon shaped pieces. Then 1 or 2 shallow cuts down the round part of each half moon.
That gives you a "raw" edge and 2 slits for smoke penetration.
It also helps keep the pieces from curling up when you fry them for your sammie.
Put them into the coolest part of your cooker and let them go as long as you can stand it.
 
I just score it lengthwise many times and then around many times.

This is also great if you haven't tried it.

Man that bloomin Bologna looks like fire! I will definitely try that out! Yea the kicker choked or we had that game in the bag!
