Ribs and Pork Belly Burnt Ends

3 racks o back ribs (10#)from Costco and 3# o pork belly rubbed up. Fired up that Bradley to 225* at 10:30am and threw ribs on at 11:30am. Applewood smoke through out. 2 hours in smoker naked(opened at 3:30. ). 2hours in foil with apple juice. Back on naked til 5:30 basting with sauce. Pulled and put in oven at 195* due to elongated Easter Egg hunt. Ate at 6:30 and ribs where still damn good. Tug off bone but bit dry due to circumstances.

Tried to finish burnt ends with some heat to 300* to carmelize but did a bit too much. Good but not great. Threw in BBQ sauce, butter, Apple Juice, apple cider vinegar, seasoning, honey and brown sugar. Assume burnt with sugar content. Surprisingly, my last two burnt ends with butter I didn't like as much. Shocking cuz I really like butter! Overall a pretty good smoke just trying to figure out delays. Kids had fun and found 105 Easter Eggs!
