So I decided to fill the smoker up this weekend since it was such a nice day Saturday. I did up some Centre Cut side ribs, some chorizo sausages and a peameal (aka Canadian Bacon....Aka cured pork loin rolled in corn meal). I make my own blend of rub....very low salt.
I used apple wood for everything as it's easily accessible for me and I like the flavour it brings to pork.
This is my first post of anything I've smoked so go easy on me. LOL
also going to try uploading pics for the first time.

My Rub mixture for the ribs.
Ribs all rubbed up.

Filled the smoker up... still had a little bit of room though...
Sausages done....
Ribs smoked and ready for a wrap for an hour or so.
Peameal Done. IT 160.
Ribs after the wrap...We like them fall off the bone... They were definitely that...
