Just started my Sunday Smoke at 12:30.. Threw on a half rack of spares and a Cured Picnic.

Now my question Is about the picnic. It says "ready to cook" but it also says "Smoked".

and then on the other side of the package it says "Half Smoked"

Since it says half smoked and cured and ready to cook. Does that mean it was cold smoked after it was cured ? So is this more like a regular Ham since it's cured ? Plan on pulling around 155`

OOOPS.. I posted this in wrong area... If you want to change it to the Pork section I would appreciate it... unless smoebody knows how and can guide me

I used to buy picnics all the time, hard to find anymore here. I believe it is already cooked you just need to reheat it, the half smoke thing is just the label the store put on from what I see, and is probably half of a smoked shoulder and not half smoked. If you heat it to the temp you say I think you will be fine.

Thanks Dave.. never thought about it being a Half of a smoked picnic.. that makes sense

yea.. the wife bought it and it wasn't what she thought it was... so i said I'll smoke it and use the NEW slicer to slice it up for sammies for lunch this week...

ok.. the final results are in. The wife struck out on both things. She thought it was a full rack of ribs when she bought them (turned out only to be half a slab).

They were just "OK"... I did the 3, 2, .5 method on them. Could have been a little more tender.

The Picnic turned out pretty good. It was a last minute thing. i seen it sitting in fridge when I was heating up the smoker and asked what she was gonna do with it. She said she was gonna put it in the oven. I said well hell.. I can throw it on the smoker and make sammies with it this week for work. "Go ahead" was the answer I got. So I just put some EVOO,CBP, and GP on it .

So I sat down with this and watched my favorite driver win Talladega... GOOOOOOOOO Clint Bowyer.

So with that I hope y'all enjoyed your smoke today....
