I'm in the DIY camp when it comes to mayo.

Both my wife and I are products of the North and it was always Hellman's. Then, we bought a second home in Florida 25 years ago and I heard several people mention Duke's favorably. While at Publix one day I bought a jar of Dukes, along with some deli turkey. Made a couple sandwich's, and after one bite, we both threw the sandwiches, along with the remaining mayo in the trash, and it was back to Hellman's, complimented by Kewpie.

After a while, the taste of plain mayo became boring and I started adding additional ingredients to the Hellman's, including our favorite condiment, Dijon mustard. After a while, I decided that was stupid, did a little research, and have been making my own mayo ever since. It's simple, fast, and inexpensive.
The only equipment you need is an immersion blender and a small cup with a circumference slightly larger than the blender base.

For a simple, basic mayo, I use-
- 1 large egg at room temperature
- 1 tbs Dijon mustard
- 1tbs fresh lemon juice
- 2 large cloves garlic confit
- 1 cup vegetable or canola oil
- 1 tsp kosher salt

Add all the ingredients to the cup, insert the blender and hold firmly to the floor of the cup. In a few seconds, the ingredients will come together in an emulsion and continue blending until you get the desired consistency you want.

Beyond that, once you've got the routine down, you can play around with additional ingredients that you favor, but keep it simple and don't go overboard

In short, you can make great tasting, fresh mayo with a few inexpensive ingredients that you may already have at home in less than 5 minutes. Give it a try.

Haha when I tried my first with Dukes I am sure I had a funny look on my face but I powered my way through the sammich and then through the rest of the squeeze bottle over the next few weeks, plenty of mustard helped

Will the lemon juice kill bird flu asking for a friend 🤣

Bringing up an old thread...
Ok. After using Mikes in sandwiches, salads, recipes, and dipping. I'm sticking with Dukes. If I can't find Dukes. Then it will be Hellmanns. There is just something lacking with Mikes. Just not what I was expecting.

Well Publix had Mike's on sale BOGO so I figured I'd try it, bought 1 jar. Like you Steve, I've eaten it on a sandwich and Sheila made chicken salad with it. Also like you, I'm sticking with Duke's. There is something missing or it just could be my 6+ decades of eating Duke's...

Right? I can't put my finger on it. But, it is missing something.

Our local Hannafords started carrying Dukes and I decided to give it a try and see what everyone is going nuts over. Well to be perfectly honest - We're sticking with Hellmans. I used it on sandwiches and salads and in all instances Hellmans came out on top,

Yup I tried is a while back and was underwhelmed, it was cheaper than Hellman's at one of our local stores I use.
Growing up mom always bought Miracle Whip so maybe my refined pallet got turned into a semi nice shipping pallet at a young age. OORRR Hellman's is just better. To each their own I guess
Now if someone starts a thread that Hunt's Ketchup is better than Heinz Ketchup then that person is sick in the head and needs to seriously consider a medical checkup

I've never tried Duke's.Our local Dollar General(s) have just started carrying it so I'm gonna give it a try,but in our house it's always been Hellman's though the store brand Clover Valley at Dollar General is surprisingly doable in a pinch.
