I didn't think I was going to get to smoke anything this weekend since I have to leave tomorrow to go out of town for work and I had lot's of chores to do. I found a couple of NY Strips in my freezer and took them out to thaw this morning for my son and I's dinner. Then I remembered seeing about smoking steaks on here so what else to do but go to SMF to learn something. After some reading I sprinkled some Montreal Steak Seasoning on them and started on my chores. After I got everything done I fired up my GOSM and got it stabilized at 210* with a medium sized chunk of hickory and on they went:

At almost an hour I started checking temps and was getting different readings from both of them, anywhere from 110* to 120* so I let them go some more. I had put a potato in my toaster oven and thought I timed it right but it wasn't getting done fast enough. After about 1 hour 10 mins the steaks were around 125* give or take and I should have pulled them then but I wanted my potato done so I left them for 10 more mins. In the mean time I fired up my gas grill on high and took it to 500*. I pulled the steaks and threw them on the heat:

About 1 1/2 mins per side and they hit the plate:

Not quite as rare as I would like but it was very juicy and tender:

This steak had a flavor I had never tasted in a steak before. It wasn't overly smokey just a hint but there was something very different. At the level of doneness it was very juicy and I think cooked at that level on a grill it wouldn't have been as juicy or tender. I can't imagine ever cooking a steak without smoking it again!

Tonight will be good, I have a full belly, Supercross and SMF!   Life is GOOD!

X2 on the SX... I was in the racing scene for almost 25 years... I miss it for sure... All the guys in the Lites class were in my grandsons class...

The steaks look great by the way

Barcia tearing em up again, but this is main is some great racing.
 
Next time pull them off at 110*. Even if they have to rest while the 'Taders finish. The 1-2 minute sear will finish them up and you will have Med/Rare...JJ
