Hello all!

I’m A chef but relatively new to smoking. I had an opportunity to to build a reverse flow smoker with an old 500l tank. It’s 2 door, each door has 2 levels/grills. I have 1 thermometer over each grill. Fire box is on the right. I have no problem with airfloor and maintaining temperature. I do have a massive difference in temperature between the top two levels and the bottom two levels. About 20C to 25C... is this normal? Also the grill on the bottom left is the coldest. About 5C colder than the bottom right. I was surprised because that’s where the smoke first hits the meat so should be at its hottest?

I think you just get to know your smoker after a few cooks and then you can use all those zones to your advantage..

So you work with what it gives you and you get in the flow of things after a few cooks..

Pictures inside and out please... FB to CC opening... inlets to the FB.. exhaust stack height and placement... etc...

I'm thinking there is a design problem with your smoker... We can fix it..... Dave

Somewhat typical RF smoker design....
