Resting Question

I'm in the process of smoking a corned beef brisket and it looks like it's gong to get done much earlier than I anticipated. Not a big deal as I will just let it rest in a cooler for a few hours.

I smoked this in a foil pan and there is a good amount of liquid now in the bottom of it. The question I have is should I drain the liquid before I foil it up to rest or leave in there?

I would leave it there and let the beef reabsorbe it.it should do that while it is cooling.
 
leave your thermometer in it and dont let it go any colder than 145. you can hold in the oven as well if your oven will go low enough. My oven only goes to 170 but for me thats perfect for holding that piece of meat that got done early
 
If you cooked it until final temp let it cool down a little before you store it in the cooler so it doesn't keep cooking. I can't say about much about the juices. My first thought would be the meat sitting in the juice could become mushy. When I pan foil. The meat is always sitting on a rack in the pan above the juice. So I keep it wrapped and in the cooler with the juices.
