I smoked a pork shoulder on Monday and got it to about 201 degrees, removed it and shredded it Monday evening. We ate some for dinner and I refrigerated the rest. I want to reuse whats left tonight in the slow cooker with some beans. If I put it in the slow cooker will that reheat it hot enough or should i pop it in the oven to warm it up then put it in the slow cooker? Everything I read said I need to get the pork back to 165 degrees F.

Slow cooker is just fine, put it on high for the initial warm up.
Whip up a batch of finishing sauce to add to it, several recipes available here.

Thanks, think 1 hour is long enough in the slow cooker?

We just microwave a minute per plate/serving and add another minute if needed. It’s already cooked fully so I just warm it in the microwave. If you do put it in the crock pot I’d be careful not to leave it too long or it will dry out. I never use water when reheating in a crock pot. I use broth or a sweet wine.

Food safety requirements for restaurants is anything that was previously cooked and reheated need to be brought up to 165° before serving and can then be held at 140°. When I'm cooking at home I try to stickn to that but I'm a little more lenient with something like that but not even gonna chance it when I'm cooking for customers.

Cover skillet with enough liquid to keep it moist.Heat it till its hot enough to your liking.

I divide my leftover in vacuum seal backs and freeze. When i ready to use it I place the whole bag in simmering water for awhile. Works great, does not dry it out the way oven and microwave does.
I have done this too and this is the best for getting it warmed up without drying it out. Takes a longer time but if I’ve got the time I’ll do it. I have not had great luck with slow cookers. I’d add apple juice to it that way.

Same here, but then use my SV hot tub so I can set/limit to the actual temp I want.
