On Sunday, a few hours before the party, place the vacuum-sealed bags (or the thawed pork if already opened) in a sous-vide bath or a pot of simmering water (around 165°F) for about 45–60 minutes until fully heated through. If you're not using vacuum bags, a covered pan in the oven at 300°F with a splash of broth or apple juice works well too—heat until it hits at least 165°F internally.I'm making a few pork butts today for the game Sunday which should be done some time late tonight.
After they are done and sit in the cooler for a few hours I was going to pull them and put them in a pan in the fridge to cool, then vacuum seal them and freeze them.
We are heading to a friend house about 6PM Sunday for a Super Bowl party. What's the best way to heat them so they are back up to temperature for the party?
We are only a 5 minute ride away from their place.
For a party, I always reheat pulled pork in a slow cooker with a splash of apple juice—keeps it juicy and flavorful without drying out. Once hot, wrap the pork (still sealed or covered) in a towel and place it in a cooler to keep warm during the short drive.
At your friend’s house, it should still be nice and hot—just give it a stir and maybe a quick zap in the microwave if it needs a touch-up.
