I know have asked this in the past, but this version is a bit different. We started a 3 pound chuckie at 9 this morning, hoping that it would be done (for pulling) for dinner tonight. Hit one nightmare of a stall. Here it is at 6 pm and it is only at 175*. Plans have changed, will be having it for tomorrow nights dinner. It is not going to be vac packed and frozen, so how do we go about reheating it without wrecking it?
 
When it is done go ahead and pull it and put it in the refer. You can use a bag or a bowl covered with plastic or foil. To reheat you can place it in a baking dish with either your finishing sauce or beef broth. Cover the pan with plastic then foil. These two will make a really good seal. Stick it in a preheated 325°F oven and let it heat until a therm reads 165°. You can also reheat in a Crock Pot set to high. Cover it, bring to 165 or just to a simmer. Serve it or set the crock pot to warm and hold it until everything else is ready to go. In the oven it will take 30 to 60 minutes to reheat, somewhat less time in the crock pot...JJ
