Being out of pulled pork, I picked up an 8 pounder at Walmart I plan to do overnight tonight. Of course I also saw this All Natural Marinade by Lea and Perrins. Garlic and Herb. Well, I love injecting pork butt and got no marinade on hand, so I got it. I figured I could review it, all natural sounded more interesting then 'some thing that might glow orange from chemicals.'

Now it doesn't say it's for injecting, so if this is a horrible idea to do, some one please tell me now, or I'll be doing so later tonight. <I don't know if there is truly a difference in injectable marinades and what they tell you to just dump on things. It looks very close to my Creole Garlic Butter though!>

If things go per plan, some time tommorrow I'll be able to review if it was worth using!
 
Did my 1st couple today. Found a few for $1.49 / lb. Had some issues trying to keep MES to temp (PID) end of week yea!
turned out well, and used Soflaquer's finishing sauce on this one 20181107_170906.jpg

2nd one is about 1/2 hr behind and will use the liquid gold for finishing.
May try injecting next time also.
 
** Technical Difficulties! **

So the all natural marinade tastes great, I'd love to use it in pulled pork. Technical difficulty. All natural marinade means it's full of the spices in a raw form compared to lawry etc. What does this mean? My injector needle ahh..didn't exactly work. It jammed up, I mean good. So as you can see we got out a balsamic salad dressing. These things happen I suppose. I didn't think it looked that chunky, but some thing in it was building up and clogging my injector needle. Still, I tasted and smelled it, so I can say the all natural marinade would be stellar. I guess I'll use it for pork chops and chicken breasts. I might mix a tad into the pork butt it self.

I also included about how much fat I tried to trim off. Some places I'd have trimmed more, but lacking a smaller knife, I also decided to leave well enough alone. Sorry guys! As for the rub It's a blend of weber KC and Kosmos Honey Bee. I'm just trying to use up the last of those two. I'm more trying to see how the marinade impacts this one for flavour; especially given it's now Balsamic!

PS: I snuck in a quick picture of Valkyrie. She was awfully suspicious and watching and the moment I started to snap a picture she was off. I thought I could trick her putting the glass on the counter like that! Not a chance!

My injector came with two needles.
One has side holes and a closed front.
The other looks like the scariest shotter needle any nightmare could imagine, I mean this thing looks like some 100 gauge butt poker! :eek:
But the huge bore isn't likely to plug up.

My first thought was to filter the L&P Marinade. But I like chunky, granular stuff on what I cook. (Why I prefer to use granulated Garlic, instead of Garlic Powder for example.)
But what if you filtered a marinader full, then put the chunkies back in for the basting marinade?
That way some flavor goes inside, the rest in the "bark", so you get the bite. :rolleyes:
 
For butts we love Tony C's jalapeno butter marinade.
It comes with a throwaway injector & Walmart usually sells it.

I thought of filtering it; I would have needed to dilute it to filter it! Which I think ruins the point! I could be wrong, but some thing tells me not to shoot it full of water!

And Al; my walmart claimed to have that, which was originally want I wanted to get, but...no where to be found. So when I asked an employee, who begrudingly looked it up in their stock system, it doesn't exist. I'd need to special order it. I guess I'll stick to cajun injector from Fleetfarm until I find some where else with the good stuff.
 
Not a fan of solids in my injections. Not sure if you ever did it Tom but injecting apple juice is a must try, especially being a fan of apple wood.
 
I'll never inject my butt, just the thought of a big ole needle or anything going into my butt hurts. Seriously I had water on the knee when I was younger and the size of the needle they used to drain the liquid was scary. Especially for a ten year old. The hub of the syringe had to be close to a foot in length, and the stem was just plain old frighting.

I have to inject my self twice daily with insulin, I use a nano needle, but I'm still terrified of needles.

I've never tried apple juice; though that would have been a good idea to dilute this with..darn! At any rate, Balsamic is good in pork butt, I didn't use a ton on the basis I didn't have much to work with, and next time I'm near Fleet Farm I'll need to get a few bottles of Cajun Injector stuff.

Did wonder if I can straight up inject BBQ Sauce, because my father asked if you can, and I suspect you could. Not sure if it would be worth the hassle.

This in turn goes 'can I inject ranch' because I actually will put ranch on my pulled pork with some pepper jack cheese and call it a day.

No joke, Mixon's rib marinade is made with ranch... Honestly, I think it could work but I prefer to keep the effect of my injections subtle/non detectable. If I did it, I would use apple juice base and a packet of ranch. I forget and at work but I think Mixon was orange juice base I think.
 
You could also try putting whatever you want to inject into a blender, then the pieces wouldn't get stuck in the injector. As for thickness thereafter, I'd add a tablespoon of liquid at a time until it is thin enough to inject. A little Apple juice or chicken stock can go a long way and shouldn't dilute the marinade too much.

The injector kit I have came with a larger needle, with holes up and down, for chunky injection solutions. It seems similar to, but a better option than, cutting little slits all over a piece of meat and sliding in herbs and garlic cloves. A needle like that may work for you too.
